Jimmy Luscombe
Co-Founder / Managing Director
Jimmy Luscombe’s journey from a successful 20-year career as a builder to becoming a passionate advocate for regenerative agriculture is an inspiring story of perseverance and transformation.
Seven years ago, after the sudden passing of his father, Jimmy took over the family farm in the NSW Southern Highlands. What began as a place to process his grief quickly turned into a deep commitment to regenerative cattle farming—a passion project that became his life’s work.
Inspired by a life-changing journey around Australia, Jimmy left his thriving building business to pursue his passion for regenerative farming and holistic well-being. Today, Highlands Natural reflects his commitment, offering premium grass-fed beef, nutrient-rich bone broths, and whole food supplements—all crafted to optimise health while respecting the land.
Through Highlands Natural, Jimmy is not just delivering exceptional products but championing a movement that connects people to the land, promotes sustainable farming, and fosters good health through natural whole foods for families across Australia.

Jake Campbell
Co-Founder / Recipe Developer / Holistic Exercise Coach / Firefighter
Jake is a holistic exercise coach at Primal Movement in Brookvale and a professional firefighter. He co-founded Highlands Natural with his close friend Jimmy, driven by a shared passion for functional health, nourishing food, and regeneratively raised beef.
Jake's love of cooking runs deep. His pursuit of the perfect bone broth-rich in flavour and full of real nourishment-became a cornerstone of the Highlands Natural offering. His broths are made the right way: slow-cooked, carefully layered, and deeply satisfying. He develops most of Highlands Natural's in-house recipes, creating food that supports vitality without compromising on taste. His philosophy is grounded in a back-to-basics approach to health-built on simple, powerful principles like thinking clearly, breathing deeply, moving often, sleeping well, staying hydrated, and eating real, nutrient-dense food.
Beyond recipes, Jake is deeply involved in the day-to-day operations of Highlands Natural-managing logistics, coordinating orders, supporting customers, and cooking at corporate days hosted on the farm. He thrives on connection and loves nothing more than bringing people together over food and fire. Jake is a lifelong surfer and still plays competitive baseball. Time in the ocean, at the beach with his family, and cooking steak over a fire are where he feels most grounded and recharged. Jake is a passionate/obsessive cook who creates nutritious, flavourful recipes that highlight the best of Highlands Natural’s premium products.

Mat Mauger
Co-Founder / Lead Butcher
Mat brings generations of expertise and a deep commitment to quality in his role as the master butcher behind Highlands Natural’s premium regenerative beef.
As the third generation to lead Maugers Meats, a family-run butchery in NSW's Southern Highlands known for its sustainable approach to farming and strong paddock-to-plate philosophy, Mat has carried on his family’s legacy of delivering exceptional grass-fed meat.
Mat is responsible for all of Highlands Natural’s butchery, applying his meticulous craftsmanship to ensure that the farm’s premium regenerative beef is expertly prepared.

Miko Fujii
Marketing & Branding
Miko brings a wealth of experience and creativity to her role as Marketing & Branding Consultant for Highlands Natural. With a background as a Creative Strategy and Content Manager in the US, Miko now applies her expertise in Australia, where she develops impactful marketing strategies that reflect Highlands Natural’s commitment to regenerative agriculture and nutrient-rich, high-quality products.
Miko specialises in crafting authentic marketing approaches that resonate with audiences and drive growth. Her work spans across branding, creative content development, and photography, ensuring that every aspect of Highlands Natural’s story is communicated with clarity and heart.

Sophie Sonnenwirth
Operations
Sophie brings strategic clarity and grounded execution to Highlands Natural’s growth journey. With a background in operational strategy and systems thinking, she plays a key role in bridging vision and operations—helping turn big ideas into reality with focus and precision.
Her work spans the business: from streamlining logistics, to supporting digital systems, reporting, customer communications, and brand alignment. Sophie ensures that the integrity behind Highlands Natural’s products is upheld at every stage of the process.
With a long-standing interest in sustainability and whole food nutrition, Sophie’s work is deeply values-led. She is passionate about making regenerative food systems work at scale, supporting better health outcomes for people, animals, and the planet.
